Healthy Peach Greek Yogurt Cake

This peach Greek yogurt cake is airy, delicious and healthy. No butter or extra fat needed, which means it’s less guilty. The texture of the cake is so fluffy that it almost resembles a Japanese style cheesecake. It can be a nice breakfast meal for one or a light snack for two, and it’s absolutely perfect for this season!

Ingredients (serves 1-2):
  • 40g Greek yogurt
  • 1-2tbs milk of your choice
  • zest of 1 lime/lemon
  • 10-15g sugar
  • 2 egg whites
  • 1 egg yolk
  • 35g AP flour
  • 1/2tsb baking powder (optional)
  • 1/2 peach
  • ~1/2tsb each: sugar, cornstarch, lemon juice
Notes:
  • Peaches that are less juicy are more suitable for making desserts, like nectarines.
  • I used vanilla flavored Greek yogurt, you may want to adjust sugar accordingly.
Instructions:

1: Slice half a peach, mix will lemon juice, sugar and cornstarch. Let stand for later use.
2: Add sugar to egg whites in 3-4 additions, beat until stiff peaks form.
3: In another bowl, mix egg yolk, Greek yogurt and milk. Sift in dry ingredients, stir and mix well.

4: Fold 1/3 whipped egg whites into egg yolk batter. (Check out how to fold batter here)
5: Fold egg yolk batter into remaining whipped egg whites.
6: Pour batter into baking pan, place prepared peach slices on top, bake at 180 C for 30-40 min, or until inserted toothpick comes out clean.

Serve cake warm or cold with more yogurt and fruits. Doesn’t it look like a store-bought cake?
