This pistachio crusted rack of lamb is utterly delicious and unbelievably easy to prepare!
The lamb meat is tender and juicy. The pistachio crust on the outside gives the dish a more interesting texture, boosting its flavours. This dish is just so elegant that it’s going to make you feel like dining at an upscale restaurant!

Ingredients (Serves 1)
- Rack of lamb (3-4 ribs)
- 1-2 tbs chopped pistachio
- 1tbs bread crumbs
- 1-2 cloves garlic
- 1 tsb olive oil
- grated parmesan to taste
- Dijon mustard
- salt and pepper

Season rack of lamb with salt and pepper. Heat a non-stick pan, cook lamb rack over medium heat until browned on each side, about 2 minutes per side. Remove lamb rack from pan and slightly let cool.

Combine and mix chopped pistachio, bread crumbs, minced garlic, salt and olive oil (I also recommend adding rendered fat from lamb). Mixture should hold together when squeezed.

Transfer lamb rack to a baking sheet lined with parchment paper/ aluminum foil, meaty side up. Spread a layer of Dijon mustard on the rack.

Press the pistachio mixture to cover the lamb rack, sprinkle grated Parmesan on top. Place baking sheet in the oven preheated at 200 C.

Roast lamb rack for 15-20 minutes, let rest for 5 minutes before cutting into individual pieces.

I like my lamb pink, if you prefer it more cooked, increase cooking time for 10-15 minutes.
