Japanese Miso Pork Sauce

This Japanese miso minced pork sauce is so easy to make. It only requires a couple of seasoning ingredients, and is done under 20 minutes. Yet, it’s super hearty and delicious. It will make a perfect workday quick meal.

It is a very versatile dish that goes perfectly with both steamed rice and noodles. You can also top green vegetables such as bok choy with the meat sauce.
Who doesn’t like simple, umami rich, flavourful food?

Ingredients (serves 2-3):
  • 300g ground pork
  • 5-6 dried Shiitake
  • 4-5 cloves garlic
  • 1-2 tsp white miso paste
  • 2 tsp soy sauce
  • 1-2 tsp sugar
  • 1tbs rice wine
Instructions:
  1. Rehydrate mushrooms by soaking them in water (do not discard mushroom-soaking water). Finely chop mushrooms and garlic. Heat about 1tsp oil in a pan, saute chopped mushrooms and garlic for 1-2 minutes.
  2. Add ground pork, stir-fry over medium heat until it’s lightly browned. Add miso paste, soy sauce, sugar and rice wine, stir to mix.
  3. Pour in about 150ml mushroom-soaking water, bring to a boil then continue cooking over medium-low heat for 10-15 minutes.
  4. Once sauce is reduced to your liking, taste and adjust seasoning if necessary. Remove from heat, serve hot.

The Japanese miso pork sauce is loaded with aroma from the mushrooms and umami taste from miso. A little sugar further enhances the flavours. Filling and satisfying.

P.s. You can also replace pork with chicken or beef!
