Prosciutto Asparagus Pasta

Prosciutto asparagus pasta, a quick and simple pasta dish which is perfect for the summer!

It is true that prosciutto is already delicious on its own, or simply wrapped around sliced cantaloupe. This Italian specialty also adds magic when treated as a cooking ingredient.

Prosciutto asparagus pasta is quick and easy to make, yet it has a complex flavour profile: the umami taste from prosciutto, subtle sweetness from asparagus and a lightly creamy texture. I mean, how can you go wrong with the combination of asparagus and prosciutto?

Ingredients (serves 1):
  • 30g prosciutto
  • 100g asparagus
  • 2 garlic cloves, minced
  • 1 serving pasta
  • 1 tbs heavy cream
  • salt pepper to taste
  • grated Parmesan cheese 
Instructions:
  1. Cook pasta according to package instructions. Meanwhile, heat a lightly greased pan, add chopped prosciutto, saute over medium heat until it’s crispy. Reserve a few pieces in a bowl.
  2. Add asparagus (cut into about 1 inch pieces) and minced garlic to the pan, saute for 1-2 minutes.
  3. Add pasta (cooked to almost al dente) to the pan, along with 1 tbs pasta cooking water, 1 tbs heavy cream, toss to coat. Season with salt and pepper.
  4. Switch off heat once desired consistency is reached. Mix with freshly grated Parmesan cheese, serve immediately, top with reserved crispy prosciutto.

There is never too much freshly grated parmesan cheese!
